Nose: Really pronounced and rich sweetness leaps out the glass. All the classic aromas of a sherry monster dram! Raisins, dark chocolate and sticky toffee pudding. A touch of vanilla and a hint of leather.
Palate: Bold and unctuous. Cask strength and residual sugars make for a mouth-coating dram. Buttery honey, sticky toffee join waves of Christmas cake, sticky toffee pudding and melted vanilla ice cream.
Finish: Long, mellow and super smooth. The fudgey sweetness lasts so long mingling with mild spicing.
About Uncharted's Do It Again
If you were following Uncharted Whisky a year ago, you may have seen a release called ‘The New Kid In Town’. It was a real Speyside sherry bomb. And, a popular one at that, it sold out in a matter of days. The good news is, Uncharted has released another… Do It Again. This aptly named release is a sister cask to the first. In this case, given another year soaking in the first fill sherry quarter cask.
Now aged 8 years old, this rich single cask has benefitted from the rather generous finishing period of 24 months in Oloroso sherry quarter cask, having been first matured in ex-bourbon wood. The resulting whisky is sweet, with notes of dates, Christmas cake, spices and all the classic sherry cask flavours we all love. It is a supremely generous dram, viscous and thick when tasted with a long, smooth and spiced finish.
Jack and Dana bottled this whisky at a natural cask strength of 55.1% ABV, with hand-finished labels, and presented un-chill filtered with a beautiful, natural, colour. Only 137 bottles yielded from this cask.
